Single Serve Deconstructed Blueberry Crumble

A deliciously simple dessert, perfect for one. When you’re craving something sweet but not something over the top, this recipe is IT. The perfect amount of sweetness. This blueberry crumble is berry special to me and truly has my heart. I mean c'mon.

RECIPE:

◡̈ topping (recipe from @ambitiouskitchen):

— 2/3 cup flour (all purpose, whole wheat, gluten free, or oat flour would all work perfect)

— 1/4 cup melted butter or melted coconut oil

— 1/3 cup brown sugar (monk fruit golden sugar used here)

— 1/3 cup rolled oats

— 1/4 tsp cinnamon


◡̈ blueberry filling:

— blueberries

— cinnamon

— honey


{This recipe can be easily modified to be gluten-free and/or vegan!}


WHAT TO DO:

1. Preheat your oven to 350 degrees. Mix all of your ingredients to make the crumble topping in a big bowl. Use your hands to form into nice crumbles.

2. Bake for 40 minutes on a baking sheet or in a ramekin.

3. For the filling, place your blueberries in a microwave-safe bowl. Add a drizzle of honey and a dash of cinnamon. Microwave for about 30-40 seconds or until the blueberries have essentially “exploded”.

4. Once the crumble topping is all done baking, layer the topping and the blueberries together.

5. Add on some ice cream — I used vanilla coconut milk ice cream — and enjoy!!!
