Mexican Style Zucchini Boats

Whether you are first learning how to cook or looking for a simple yet healthy dinner, these zucchini boats are IT. My absolute go-to meal when I'm craving some veggies & want to fuel my body with something I know will make me feel good.
– 1 zucchini
– spicy chicken sausage
– black beans
– mexican four cheese blend
– olive oil
– seasonings: salt 🧂, pepper, chipotle chile 🌶
– toppings: cilantro and sriracha or taco sauce
preheat your oven to 450 degrees.
wash your zucchini and cut in half. next, scoop out the middle of each half, and get rid of all of the seeds.
cut up the chicken sausage, peppers, and onions. combine with the corn and black beans, and sauté all of it together in a pan with some olive oil & chipotle chile seasoning.
coat the zucchini boats with olive oil, salt and pepper. fill each boat with your “stuffing”.
cook in the oven for about 25-30 minutes, or until the zucchini is tender.
take the boats out and put on the mexican cheese. throw it back in the oven until the cheese is golden
finally, top with cilantro & sriracha or taco sauce and enjoy!
